This is a hearty, warming dish that's both very healthy and very filling. It's a brilliant way to get your veggies in, and tastes amazing as leftovers for lunch too. Our kit serves 4.

In the kit:
Two spice mixes for making your dahl, including chilli powder, turmeric, ground cumin, fenugreek powder, garam masala, cumin seeds, fennel seeds, yellow mustard seeds, and curry leaves.
You will need:
Vegetable oil (5 tbsp)
Garlic cloves (2, crushed)
Ginger (thumb-size piece, grated)
Red onion (1, finely chopped)
Large sweet potatoes (2, chopped into even cubes about 2cm)
Red lentils (250g)
Vegetable stock (800ml)
Spinach (100g)
Salt (to taste, recommend 1 tsp)
Fresh coriander (optional, to serve)
