Our delicious smoky chicken quesadilla's consists of all the finest premium organic spices. At the centrepiece of this twist on mexican quesadillas is organic smoked paprika, organic chipotle chilli powder and organic ground cumin that gives a delicious Mexican aromatic seasoning for the chicken filling inside these quesadillas

2 tbsps Vegetable oil
3 Chicken breasts (chopped into strips)
1 tsp salt
2 Onions, thinly sliced
1 red bell pepper, sliced
1 yellow pepper, sliced
6 Tortillas
Cheddar cheese (250-300g, grated)
dips like guacamole, salsa, sour cream to serve (optional)

Instructions

In a large bowl add the chicken and 1 tbsp of oil and sprinkle over your teaspoon club spice mix and mix thoroughly
Heat 1 tbsp of vegetable oil in a wok or frying pan on a medium to high heat and add the chicken. Begin searing the chicken for approximately 4 minutes
As the chicken is searing, warm the remaining vegetable oil in a different pan and add the onion and yellow and red peppers and lightly cook for approximately 2 minutes. Remove from heat and set aside
As soon as you are certain the chicken is cooked through remove this pan from the heat also
Place one tortilla into a large non-stick frying pan flat on a medium heat
Sprinkle approximately 25 g of the cheese onto half of the tortilla, and spoon 1/6 of the chicken and onion and pepper mixture on top. Finish with a further 25 g of cheese sprinkled on top of the chicken and pepppers and fold over the other half of the tortilla
Heat for a minute and a half, then flip the tortilla and heat for another minute and a half. Make sure the tortilla is browned and the cheese has melted
Remove from the pan and keep warm. Repeat steps 5-7 five more times, so all tortillas are used
Cut the quesadillas into 3 segments each and serve hot. You could serve with dips like guacamole, soured cream or salsa, and a side salad

Notes

Make sure to put cheese on the bottom and top of your quesadillas to give the best outcome
