Prawns Al Ajillo

Ingredients: 1 tbsp Butter or oil; 2 Garlic cloves (thinly sliced); 300 g Raw fresh prawns (you can use frozen prawns but will need to defrost them thoroughly before cooking); 30 ml White wine vinegar; 0.5 Lemon zest; 0.5 Lemon juice; 0 Fresh parsley (optional to serve)

Place the butter or oil in a frying pan on a medium heat
Add your Teaspoon Club spice packet and fry for 1 minute until the butter is melted or the oil is heated
Add the garlic cloves and stir fry for a minute or two until they are fragrant, then turn up the heat to high
Add the prawns and cook for 1-2 minutes
Add the white wine vinegar to the pan
Add the white wine vinegar, lemon juice, and lemon zest to the pan. Season to taste
Cook the prawns for a further minute or so until they are a white/pinkish translucent colour (not at all grey) and cooked through
Serve hot with a sprig of fresh parsley if desired. These prawns are also delicious with rice, drizzling over the spiced butter/oil to serve

Notes

These prawns are light and delicious, a perfect tapas dish to accompany others.
