¼ cup vegetable oil
2 tbsps lemon juice
3 garlic cloves, minced
1 thumb-sized piece fresh ginger, grated
½ tsp salt
1 ¼ kg boneless skinless chicken breasts or thighs

Instructions

Begin by making the marinade, which should be done 2-6 hours before you plan to cook the chicken. In a jug or small bowl add the oil, lemon juice, garlic, ginger, salt and the teaspoon club spice packet. Then, whisk the ingredients in your bowl together to form your marinade.
Place each of the chicken breasts between greaseproof or baking paper and pound them with a rolling pin to flatten them. Do so until you achieve an even depth between ¼ and ½ an inch for each breast . Place in a ceramic dish/bowl.
Pour the marinade over the chicken and place in a fridge to marinate for 2 – 6 hours.
When ready to cook the chicken, ensure the grill/barbeque has reached a hot temperature. Lightly brush the grill/barbecue with oil and then place the chicken directly onto it.
Cooking time will vary slightly depending on the thickness of your chicken. Grill until cooked through, turning once throughout– approximately 4 minutes each side should be sufficient but please make sure the chicken is fully cooked before serving.
