Ingredients: 1 tbsp Vegetable oil; 1 Onion, finely chopped; 1 Garlic clove, minced; 300 ml Passata; 100 ml Water; 1 tsp Sugar; 2 tsp White wine vinegar; 1 tsp Salt; 1 tbsp Chipotle chilli paste (optional); 400 g Jackfruit, drained and dried; 8 small pieces Tortillas, or tacos if you prefer; 2 Limes, chopped into wedges; 0 Taco toppings according to taste; thinly sliced red onion, fresh coriander, tomatoes, avocado, purple cabbage, or cotija cheese are all great; 0 Handheld blender

1 tbsp Vegetable oil
1 Onion, finely chopped
1 Garlic clove, minced
300 ml Passata
100 ml Water
1 tsp Sugar
2 tsp White wine vinegar
1 tsp Salt
1 tbsp Chipotle chilli paste (optional)
400 g Jackfruit, drained and dried
8 small pieces Tortillas, or tacos if you prefer
2 Limes, chopped into wedges
Taco toppings according to taste; thinly sliced red onion, fresh coriander, tomatoes, avocado, purple cabbage, or cotija cheese are all great

Instructions

In a wide pan, heat half the oil for 1 minute on a medium high heat. Add the garlic and onion, and cook for 5 minutes until softened. Remove from the heat
To make the tinga sauce, place the passata, water, sugar, white wine vinegar, salt, your Teaspoon Club spice packet, and the cooked onion and garlic into a blender and blend into a sauce. If you are using chipotle chilli paste, mix it into the sauce too
In a wide pan, heat the remaining oil for 1 minute on a medium high heat. Brown the jackfruit pieces lightly in the pan, being careful not to cook them for too long, as they will cook slowly in the tinga sauce
Pour in the tinga sauce and simmer the jackfruit for 20 minutes, stirring occasionally, until the jackfruit softens and begins to break down
Remove the jackfruit from the pan and shred using a fork. Whilst shredding the jackfruit, continue to cook the tomato sauce slowly so it reduces to a thicker consistency
Return the shredded jackfruit to the pan and cook on a medium heat for 5 minutes, until the sauce is significantly thicker and has blended well with the shredded jackfruit
Assemble the tacos by spooning the jackfruit onto the tortillas, adding your chosen toppings and a squeeze of lime juice

Our jackfruit tinga tacos are the perfect addition to any Mexican night. Cooked and shredded in a tinga tomato sauce, the jackfruit strips are a delicious substitute. Pair with crumbly cheese, fresh salad, and soured cream and you've got the perfect taco!
