Ingredients: 1 Lime (grated zest and juice); 2 tsp Honey; 1 Garlic clove (crushed); 2 tbsp Butter (melted); 0 Fresh coriander (to serve); 0 Salmon (1 side, approx. 1kg), or smaller pieces according to preference

Preheat oven to 190°C/170°C fan/375°F/ gas mark 5
Combine the lemon juice and zest, honey, garlic, and your first Teaspoon Club spice packet in a saucepan and place on a medium heat
Bring to a simmer and reduce until it is about 1 tablespoon, which should take about 3 minutes. Stir in the melted butter thoroughly
Place the salmon fillets onto a large piece of foil on a baking tray and brush the spiced lemon butter over the salmon evenly
Sprinkle your second Teaspoon Club spice packet and the chopped coriander evenly across the salmon fillets
Place a second piece of foil over the top of the fillets and crimp the edges together to create a sealed parcel
Bake for approx. 15-20 minutes, dependent on the size of your salmon fillets (you should find instructions on your salmon packet regarding the weight of the fillets and recommended cooking time)
Remove the foil for the last 2 minutes of cooking to allow the top of the salmon to brown slightly
Serve as desired, though a little crème fraîche can cool it down nicely if you find it a little hot
