5 in Season Ingredients for February

Love is in the air everybody. Read on for 5 of our favourite in-season ingredients this month,
as well as some great recipes to cook with them. Oo lala!

Lemons

Try preserving lemons (as per our persevering lemon recipe kit here), and you could use these lemons next month to cook some delicious Moroccan inspired recipes with. Yotam Ottolenghi has tonnes of recipes using preserved lemons, not least of all this saffron chicken

Black truffle

Not the most common ingredient, black truffle pairs wonderfully with mushrooms in a risotto like this one here. You could also get a bit more creative and try some of the more unusual recipes listed here. For us, nothing beats truffles in pasta, so we’re giving this recipe a go this February.

Jerusalem artichoke

Not technically an artichoke, this vegetable is a relative of the sunflower. It has a nutty but sweet flavour. Prepare them with garlic and thyme, like this recipe here, or try them in a delicious soup like this recipe

 

Purple sprouting broccoli

Let this vegetable do the talking by itself, preparing it individually alongside other dishes. If you want some inspiration on how to prepare the broccoli, we can recommend this Tesco recipe for chilli and red pepper, and this BBC recipe for garlic and sesame. 

 

Beef and Lamb

As if you needed an excuse to eat beef and lamb during Winter time! To keep it fresh and interesting, our Moroccan stuffing goes wonderfully with lamb, and Cassie Best has a great recipe on the BBC for a lamb dish preapred on a butternut squash tagine.
