Vegetarian dinners selection box
Our vegetarian dinners selection box aims to take the hassle out of choosing what to cook, containing 5 main meal recipes with recipe cards and premeasured spices. All 5 are full of flavour, and cover a range of styles. Simple and easy!
Our selection costs £5.00 and contains 5 meals which each serve at least 4, and you can check out the recipes for each of the kits by clicking on their names:
Butternut squash and coconut curry
Ricotta and spinach aubergine rolls
Our Teaspoon Club spice mixes for all 5 of the recipe kits, as well as recipe cards for each of the dishes, telling you how to make each of them. These will come labelled and premeasured ready for you to pour in when the recipes require- it couldn't be easier.
The spices including in the spice mixes are: a whole nutmeg, cinnamon, cumin, coriander seeds, cumin seeds, fennel seeds, yellow mustard seeds, tamarind paste, green cardamom pods, ground coriander, garam masala, black mustard seeds, fenugreek seeds, hot chilli powder, a cinnamon stick, bay leaves, paprika, oregano, cayenne pepper, and garlic powder.
What will I need?

Vegetable oil (9.5 tbsp)
Chopped tomatoes (5 x 400g tin)
Parmesan (to top, or vegetarian alternative)
Green chilli (2)
Garlic cloves (6)
Ginger (2 thumb-sized pieces)
White button mushrooms (350g)
Salt (to taste)
Coriander (to serve)
Butternut squash (1)
Coconut milk (2 x 400ml tin)
Coconut flakes (50g)
Honey or syrup (2 tbsp)
Handful flaked almonds and chopped coriander, optional to serve
Feta, chopped (200g)
Courgette, chopped (2)
Tortillas, small (8) (you could also use store-bought hard taco shells if you prefer)
