Ricotta and spinach aubergine rolls

In the kit:
Two spice mixes you can use to make this recipe 6 times, including ground cumin, ground cinnamon, basil, oregano, Italian seasoning, garlic powder, paprika, and a whole nutmeg ready to grate.
You will need:
Vegetable oil (3 tbsp)
Garlic clove (1, crushed)
Onion (1, finely chopped)
Chopped tomatoes (1 x 400g tin)
Red wine (30ml)
Sugar (½ tsp)
Parmesan (to top, or vegetarian alternative)
