Vegetable Jalfrezi - £3.25

This Bengali classic curry is packed full of flavour with brightly coloured peppers making it a lovely, tasty dish

Ingredients

In the kit:

Three spice mixes for your Jalfrezi, including cumin seeds, ground coriander, turmeric, ground cumin, mustard powder, garlic powder, ground ginger, cayenne pepper, ground cloves, ground cinnamon, chilli powder, and fenugreek powder

You will need:

Vegetable oil (2 tbsp)
Green chillies (2, finely chopped- could have more or less depending on desired spice level)
Garlic clove (1, crushed)
Ginger (thumb-size piece, grated)
Onion (1, finely chopped)
Bell peppers (1 red and 1 green, deseeded and finely chopped)
Water (1 tbsp)
Cauliflower (250g, florets roughly chopped)
Mushrooms or vegetables of your choice (200g, sliced)
Chopped tomatoes (1 x 400g tin)
Fresh coriander (handful, chopped)

Method

Our kit serves 4

  1. Heat the oil in a deep, heavy-bottomed pan on a medium heat
  2. Add your first Teaspoon Club spice packet and fry for 1 minute until the seeds start to pop and are fragrant
  3. Add the chillies, garlic, and ginger, and onion and fry for 2 minutes. Add both peppers to the pan. Fry for a further 5 until the onion is softened
  4. Add your second Teaspoon Club spice packet and mix well. Fry the mixture for 2 minutes coating the vegetables thoroughly in the spices
  5. Add your final Teaspoon Club spice packet with 1 tablespoon of water and mix your curry well. Fry for another 2 minutes
  6. Add the cauliflower and cook for 5 minutes, stirring as it cooks
  7. Add the mushrooms, chopped tomatoes, and fresh coriander and stir well
  8. Cover the pan and simmer for up to 15 minutes on a medium heat until the cauliflower is soft and cooked through. If your curry is looking a little dry, add a little boiling water and stir through
  9. Serve hot with rice
