Smoky Chicken Quesadilla - £1.75

Quesadillas are a delicious Mexican dish and these are no exception. Full of flavour and a quick-fix for a week night supper

Ingredients

In the kit:

A spice mix for the quesadillas, including smoked paprika, garlic powder, oregano, ground cumin, and cayenne pepper

You will need:

Vegetable oil (1 tbsp)
Chicken breasts (3, chopped into strips)
Onions (3, finely chopped)
Tortillas (6)
Cheddar cheese (250-300g, grated)

Method

Quesadillas are a delicious Mexican dish and these are no exception. Full of flavour and a quick-fix for a week night supper. 

Our kit costs £1.75 and serves 4

  1. Heat the vegetable oil in a wok or frying pan on a medium-high heat and add your Teaspoon Club spice packet
  2. Stir well and add the chicken. Fry for 2 minutes, stirring as it browns
  3. Add the onion and fry for a further 5-8 minutes, until the chicken is cooked through and the onion is softened and browned. Continue stirring as it cooks to prevent any of the chicken or onion sticking to the bottom of the pan or burning
  4. Remove from the heat and set aside
  5. Place one tortilla into a large non-stick frying pan flat on a medium heat
  6. Spoon 1/6 of the chicken and onion mixture on top of half of the tortilla. Sprinkle over 1/6 of the grated cheese and fold over the other half of the tortilla
  7. Heat for a minute and a half on each side, until the tortilla is browned and the cheese has melted. Remove from the pan and keep warm
  8. Repeat steps 5-7 five more times, so all tortillas are used
  9. Cut the quesadillas into 3 segments each and serve hot. You could serve with dips like guacamole, soured cream or salsa, and a side salad
