In the bundle:

The spiced flavouring mix for this bread includes ground ginger, allspice, salt, cloves, cinnamon, and nutmeg. You will also receive a recipe card telling you how to make the pumpkin bread

You will need:

Plain flour (240g)
Bicarbonate of soda (1 tsp)
Baking powder (1 tsp)
Unsalted butter (180g)
Golden caster sugar (450g)
Eggs (2, large, beaten)
Pumpkin puree (400g, see recipe for how to make this)

Our bundle costs £0.85 and makes 2 small loaves.

  1. If you are making the pumpkin puree, preheat oven to 170°C/150°C fan/350°F/gas mark 4. Cut a pumpkin in half, remove the seeds, and scour with a sharp knife into the flesh of the pumpkin. Drizzle with a little olive oil and roast in the oven for 1 hour until the flesh is soft to cut through. Spoon the flesh into a bowl and, using a handheld blender, blend until smooth. Alternatively, you can buy tinned pumpkin puree from some supermarkets. Weigh out the 400g and set aside to use. You can freeze the rest for future recipes
  2. Preheat oven to 190°C/170°C fan/375°F/gas mark 5
  3. Line and grease one 22cm x 12 cm or two 15cm x 8 cm loaf tins and set aside
  4. Sift the flour, baking powder, baking soda, and your Teaspoon Club spice packet into a mixing bowl and set aside
  5. In a separate bowl, cream together the butter and sugar
  6. Add the eggs to the sugar and butter and beat well. Then add the pumpkin puree and stir until well incorporated. Do not worry if the mixture looks a little curdled
  7. Pour the dry ingredients into the wet and fold until your batter is smooth
  8. Spoon into the tins evenly and bake for 65-75 minutes. If the top of the loaves begin to burn, cover them over with foil but continue to bake until the bread is spongy and a skewer inserted into the centre of the loaf is completely clean when removed
  9. Allow to cool for ten minutes or so before you remove from the tins and place on a cooling rack. Allow to cool completely before serving
