Ingredients

In the kit:

Two spice mixes ready to add to your curry. They include cumin seeds, ground cumin, garam masala, bay leaves, cardamom pods, cloves, dried chillies, ground coriander, turmeric, chilli powder, and green peppercorns

You will need:

Vegetable oil (3 tbsp)
Shallots (8, finely chopped)
Garlic clove (1, crushed)
Ginger (thumb-size piece, grated)
Onions (2, finely chopped)
Tomatoes (4, finely chopped)
Water (120ml)
Chicken breasts (4, chopped into medium-size pieces)

Method

Possibly one of our favourite curries, this is an authentic tasting dish and a very easy to make.

Our kit serves 4

  1. In a large pan or wok over a medium heat, fry 1 tablespoon of the vegetable oil and add the shallots. Fry for 5 minutes, then remove from the pan and set aside
  2. Add the remaining 2 tablespoons of oil and your first Teaspoon Club spice packet to the pan and fry for 2 minutes, stirring regularly
  3. Add the garlic, ginger, and the large onions. Fry for 5 minutes until the onion is softened
  4. Add your second Teaspoon Club spice packet and fry for a further 2 minutes
  5. Add the tomatoes and water and stir thoroughly, leaving your curry to simmer for 5 minutes
  6. Add the chicken and simmer for 15 minutes more, stirring frequently
  7. Put the shallots you set aside back into the pan and stir well, leaving for a final 10 more minutes until the curry reaches your desired thickness and the chicken is cooked and white through
  8. Season to taste and serve hot with rice or chapatis and chopped coriander
