Ingredients

In the kit:

Three spice mixes for the curry including chillies, coriander seeds, cumin seeds, garam masala, and turmeric

You will need:

White fish fillets (600g, cut into small pieces)
Lemon (1, juiced)
Vegetable oil (3 tbsp)
Onion (1, finely chopped)
Garlic cloves (3, crushed)
Ginger (thumb-size piece, grated)
Tomatoes (1 x 400g tin)
Lime (1, juiced)
Coconut milk (1 x 400ml)
Red wine vinegar (1 tsp)
Green chillies (2, whole and pierced)
Lime juice and coriander to serve

Method

Our kit serves 4 

  1. Take your first Teaspoon Club spice packet and rub into the fish with a little salt (½ teaspoon). Squeeze over the lemon juice and set aside for later.
  2. Take your second Teaspoon Club spice packet and dry fry in a frying pan over a high heat for 1 minute or so. The seeds will turn a light brown (careful not to burn them) and the spices will release their fragrance. Remove from the heat and place into a pestle and mortar. Grind well and set aside
  3. In a large saucepan, heat the vegetable oil over a medium heat and add the onion, garlic cloves, and grated ginger. Fry for 5 minutes until the onion starts to soften
  4. Add your third Teaspoon Club spice packet with the spices from your pestle and mortar. Fry for 1 minute until their fragrances are released
  5. Add the chopped tomatoes and stir well, cooking for a further minute
  6. Add the lime juice and coconut milk and stir in. Simmer for 5 minutes
  7. Rinse the fish with cold water and add to the sauce, along with the red wine vinegar, and whole green chillies. Cook for at least 5 minutes until the fish is white and cooked through, being careful not to overcook it as the fish will turn rubbery
  8. Serve hot with fresh coriander if desired, and a squeeze of lime juice
