Frijoles are fried black beans with spices and onion. These go great with chorizo or crumbled feta cheese and are a fantastic addition to some of our other Mexican recipes

Ingredients

In the kit:

A spice mix for the frijoles including a bay leaf, cumin seeds, ground cumin, oregano, pepper and chilli flakes

You will need:

Vegetable oil (1 tbsp)
Red chilli (½, deseeded and finely chopped)
Garlic clove (1, crushed)
Onion (1, finely chopped)
Black beans (1 x 400g tin)
Feta cheese (optional, 50g crumbled to serve)

Method

Frijoles are fried black beans with spices and onion. These go great with chorizo or crumbled feta cheese and are a fantastic addition to some of our other Mexican recipes

Our kit serves 4

  1. Begin by heating the vegetable oil in a saucepan or deep frying pan on a medium high heat
  2. Add your Teaspoon Club spice packet and stir for 30 seconds to a minute, until the spices are fragrant
  3. Add the chilli, garlic, and onion and fry for 3-5 minutes until the onion begins to soften
  4. Pour in the black beans (including the liquid) and simmer for 10 minutes or so until any sitting liquid has evaporated and your frijoles thicken. Stir continuously to stop any of your frijoles from catching or burning in the bottom of the pan, and to make sure the spices are mixed through. As your frijole cooks, you can break down the black beans with a wooden spoon if you’d like a softer texture
  5. Take off the heat and serve hot with crumbled feta cheese on top
