In the kit:

Three spice mixes for the Bombay potatoes including turmeric, dried red chillies, curry leaves, cumin seeds, mustard seeds, onion powder, fennel seeds, and nigella seeds

You will need:

Potatoes (450g)
Vegetable oil (4 tbsp)
Onions (2, finely chopped)
Fresh chillies (2 green, finely chopped)
Fresh coriander (handful, finely chopped)
Lemon juice (to taste)


Our bombay potatoes are just a delicious addition to a curry night. Perfect for a Indian dinner party- which is why you can buy it in our Indian dinner party selection box!

Our kit serves 4-6

  1. If dirty, scrub and prepare the potatoes
  2. Quarter the large potatoes and halve the small ones. Boil the potatoes in boiling water with salt and your first Teaspoon Club spice packet for 10-15 minutes or until tender
  3. Drain well and fork through lightly to break up some of the potatoes. Set aside
  4. Heat the vegetable oil in a wok on a medium heat and add your second Teaspoon Club spice packet. Stir until the dried chillies in the pack are blackened
  5. Add the onions, chillies, coriander, and your final Teaspoon Club spice packet and cook until the onions are soft
  6. Add the potatoes with 1 to 2 teaspoons of water to moisten
  7. Cook on a low heat for 10 minutes, stirring well to ensure the Bombay potatoes do not burn or catch at the bottom of the pan, though they are nice when a little crispy on the outside
  8. Add lemon juice and seasoning to taste
  9. Serve hot alongside curries
