Moroccan one pot tagine

This vegan one pot tagine is full of rich flavours. Served with fluffy couscous and toasted almond flakes, it's as much of a delicious mid week meal as it is a dinner party crowd pleaser. Our kit serves 4.

In the kit:
A spice mix for your tagine, including ground coriander, ground cumin, paprika, smoked paprika, cayenne pepper and ground cinnamon.
You will need:
Vegetable oil (5 tbsp)
Garlic cloves (3, crushed)
Ginger (thumb-sized piece, grated)
Onion (1, finely diced)
Butternut squash (1, chopped into 1 inch cubes)
Stock (420 ml)
Lemon juice (1 lemon)
Flaked almonds (½ cup)
Chickpeas (1 x 400g tin, drained)
Butterbeans (1 x 400g tin, drained)
Dried apricots (½ cup, chopped pieces)
Boiling water (420 ml)
Butter (1 tbsp)
Olive oil (1 tbsp)
Salt (½ tsp)
Couscous (1 ½ cups)
Green olives (½ cup, chopped pieces)
Fresh coriander (handful to serve)
