Our fish curry with tomatoes and roasted coconut topping is a light and delicious curry that takes less than an hour to prepare

What's in the kit?

Three spice mixes for the curry including black mustard seeds, curry leaves, ground coriander, ground cumin, turmeric, chilli powder, and toasted coconut flakes, which are premeasured and ready to pour into the mixture when the recipe indicates

What will I need?

Vegetable oil (2 tbsp)
Onions (2, medium)
Ginger (1" fresh piece)
Garlic (3 cloves, minced)
Lime juice (1.5 tbsp)
Brown sugar (2 rsp)
Potatoes (3, medium, can be substituted for sweet potato if preferred)
Chopped tomatoes (1 x 400g tin)
Fish stock (300ml)
Coconut milk (200ml)
Firm white fish (e.g. haddock, cod, monkfish, 600g)
