Curry leaves are very popular in South Indian curries, where they are used in a similar way to bay leaves in Western recipes. The Tamil word for curry leaves is kariveppilai, which translates literally as ‘the leaf used to make curry’. They have a nutty aroma when fried in hot oil, with a hint of citrusl, similar to basil or kaffir lime.
