This twist on the classic eclair is full of delicious flavour combinations, with subtle cardamom hints in the crème patissière and a warm spiced caramel to top.

What's in the kit?

A vanilla pod, cardamom, and cinnamon for the crème patissière, and a spiced mix including ground fennel, cloves, cinnamon, star anise, and ginger for the spiced caramel (optional). You will also receive a recipe card with your bundle 

What do I need?

Plain flour (60g, sifted)
Butter (50g)
Sugar (1 tsp)
Eggs (2)
Water, cold (150ml)

Crème patissière:
Milk (210ml)
Caster sugar (60g)
Egg yolks (3)
Plain flour (1 tbsp)
Corn flour (0.5 tbsp)
5g Butter

Either caramel:
Caster sugar (4 tbsp)
Butter (20g)
Cream (2 tbsp)

or coffee icing:

Boiling water (2.5 tbsp)
Icing sugar ( 300g)
Instant coffee granules (1 tbsp)
