This traditional one-pot is full of Creole flavours. It's a labour of love, but well worth the effort. Our kit costs £1.60 and serves 6.

In the kit:

Two spice and herb mixes including bay leaves, arrowroot, paprika, thyme, onion powder, garlic powder, parsley, cayenne pepper, oregano, and basil.

You will need:

Andouille sausage (200g, chopped into small pieces)
Boneless chicken thighs (1kg, chopped into small pieces)
Butter (1/3 cup, could use 1/3 cup vegetable oil if preferred, plus a little for browning the meat)
Plain flour (1/3 cup)
Onion (1, finely chopped)
Celery (3 stalks, finely chopped)
Stock (800ml)
Chopped tomatoes (1 x 400g tin)
Green bell peppers (2, deseeded and finely chopped)
Spring onions (4, finely chopped)
