Ingredients: 0.25 cup vegetable oil; 4 garlic cloves, minced; 1 juice of lime; 1 juice of orange; 1 tbsp white wine vinegar; 1 tsp salt; 8 chicken thighs or 6 breasts; 0 extra generous squeeze of lime juice to serve

In a large bowl add the oil, garlic, lime juice, orange juice, white wine vinegar, salt and your teaspoon club spice mix stage 1. Whisk thoroughly then add your teaspoon club spice mix stage 2, ground achiote, this will give your marinade a lovely deep red hue
Add the chicken to the bowl and mix thoroughly. Note, if using chicken thighs with skin score the skin first, allowing better coverage for the marinade. Cover, then place in the refridgerator for 1 hour
Place foil on the grill and apply a medium heat. Remove the chicken from the marinade and place on the grill. If using breasts cook for approximately 25 minutes. If using thighs cook for approximately 30 minutes. Regularly check throughout and turn halfway through cooking
Once certain your chicken is cooked through, serve with a generous fresh squeeze of lime juice to really help bring out the flavours of the asado marinade. Enjoy with rice and salad
