Ingredients: 2 onions, halved; 1.5 tsps salt; 4 garlic cloves; 0 thumb-size piece ginger, grated; 1 tbsp tomato puree; 1 tbsp vegetable oil; 200 g polpa chopped tomatoes; 1 tsp soft brown sugar; 2 x 400g tins chickpeas, drained & rinsed; 300 ml coconut milk; 150 g baby spinach, washed; 0.5 cup crème fraîche; 0 rice to serve (optional); 0 fresh coriander to serve (optional)

2 onions, halved
1 ½ tsps salt
4 garlic cloves
thumb-size piece ginger, grated
1 tbsp tomato puree
1 tbsp vegetable oil
200 g polpa chopped tomatoes
1 tsp soft brown sugar
2 x 400g tins chickpeas, drained & rinsed
300 ml coconut milk
150 g baby spinach, washed
½ cup crème fraîche
rice to serve (optional)
fresh coriander to serve (optional)

Instructions

Before making your butter curry paste, boil the onions in a pan of boiling water with 1/2 a teaspoon of salt for 10 minutes. Drain the onion and allow to cool a little
Place the onions, garlic cloves, ginger, tomato puree and 2 tablespoons of water into a handheld blender and blitz to a smooth paste
Heat the vegetable oil in a large heavy-based pan and add your teaspoon club spice mix stage 1 and fry for 30 seconds on a medium heat. Add your onion paste to the pan with 1 teaspoon of salt and cook for 2 minutes
Add your teaspoon club spice mix stage 2 and cook for a further 3 minutes also on a medium heat
Add the polpa chopped tomatoes and sugar to the pan and mix well. Then add the chickpeas and coconut milk, stir well, and simmer on a low heat for 10 minutes
Add the spinach and crème fraîche and stir through. Serve and enjoy with rice and a topping of fresh coriander!
