Agave syrup, found in the volcanic soils of Southern Mexico, is a natural sweetener that tastes and looks like honey, although unlike artifical sweeteners it does not possess any bitter, chemical-like after-tastes. Agarve syrup is also disimilar to many other sugars, as it does not cause high blood pressure or high production of insulin. Generaly recipes using agave syrup instead of honey will require less of it, as it is around 30% sweeter.
